In addition to or instead of fried courgette, you can cut tomatoes or aubergine into fine slices and sauté them.
Preparation time: 20 minutes
Cut the courgettes lengthways into slices (thickness 5 mm), put the cream cheese in a bowl, stir until smooth and season to taste with salt, pepper and lemon juice, then fold in the chives. Heat up the olive oil in a grill pan and sear the courgette slice for around two minutes on both sides. Season with salt and pepper. Coat the slices of farmhouse bread with cream cheese and place the slices of courgette on top. Garnish with chive tips and serve.
